Love baking these nut breads for friends and family to create that happy environment with some guilt free eating, I have great memories with this nut bread eating….all my evening breaks or a quick walk with friends at office means going to Starbucks and having a banana nut bread, and I truly crave for it …

This Super moist, healthy banana nut bread is truly delicious without any refined sugars and it satisfies all those nut bread cravings in a guilt freeway. The magic ingredient in this recipe is super ripe bananas (when I say super ripe that mean not so good looking ) I make this recipe whenever I have sad looking bananas on my counter that need to be used, trust me that just changes the whole nut bread game.
You can totally play with this recipe by adding your favorite toppings and hand full of ingredients.
INGREDIENTS
- 1 ¾ cups Wheat flour (unbleached all-purpose, or gluten free blend)
- 3 Large oversized bananas
- ⅓ cup Maple syrup (or Agave)
- ⅓ cup Olive oil(coconut oil in liquid state or Earth balance vegan butter at room temp)
- 1 teaspoon vanilla extract
- 2 teaspoons baking powder
- 1 teaspoon cinnamon (Optional)
- pinch of Salt
- 1/4 cup Oat milk (any plant-based milk of choice, feel free to add little more depending on the batter consistency)
- ½ cup chopped walnuts
- ¼ cup chocolate chips
(You can add 2 eggs into this recipe if you are not looking for a vegan friendly one)
Steps to follow:
Preheat oven to 350 degrees, Grease your loaf pan.
Take your mixing bowl and add all wet ingredients. Mashed bananas, oil, maple syrup, vanilla extract, milk and mix them.
Now Add all the dry ingredients… flour, baking soda, baking powder and salt mix well, but don’t overmix, If mixture seems too thick, add more milk, especially when you are using heavier flours such as whole wheat
Pour batter into a greased loaf pan. Bake for about 50 min – 1 hour.
Mini loafs – this batter can be used for 3 mini loafs bake them for 40 – 45 min
Test it with toothpick if it comes out clean it should be ready.
After removing from oven let it cool before slicing and enjoy every bit of it with a cup of tea in this cozy warm winters
Shelf-life of this Banana bread on the counter is up to 3 – 4 days. Or can be store in the refrigerator for up to a week. You can also keep it in the freezer, it will stay fresh for up to 2 months if stored in a freezer safe container or bag.
